Refreshing Italian Salads

When the weather gets warmer, many Italians choose a colourful mixed salad for their lunch. Not just some boring green leaves, but a colourful feast of sometimes unexpected ingredients. We highly recommend you try this crunchy mixed salad in which orange carrots and red tomatoes add a vibrant touch of colour to the greens. The typically Italian combination of rocket and parmesan gives the dish a distinctively Italian accent. The croutons add texture and taste but to avoid, you could omit for a chunk of rustic bread on the side.

Ingredients:

Green leaves

Carrots

Tomatoes

Rocket

Parmesan shaves

Radish

Toasted bread croutons

Season with salt, balsamic vinegar and a drizzle of extra-virgin olive oil. This quick and healthy lunch is ready in minutes!
