We highly recommend you try this crunchy mixed salad in which orange carrots and red tomatoes add a vibrant touch of colour to the greens. The typically Italian combination of rocket and parmesan gives the dish a distinctively Italian accent. The croutons add texture and taste but to avoid, you could omit for a chunk of rustic bread on the side.
